Boil water add dry red chillies, switch off the flame, let the chili soak for 15-20 minutes.
Meanwhile, heat a pan, add whole coriander seeds, roast them, till they start to become fragrant.
After chilies are soaked, drain the water add to a blender, also add toasted coriander seeds, onion, garlic and water, grind till smooth paste.
Heat 2 tbsp of oil in a wok, cook for ten - twelve minutes at low flame, it will become dry, take out in a bowl. Add pinch of sugar and a tbsp of tamarind, mix well. this paste will be fresh inside the fridge for a week.
In the same wok add prawns or chicken. Sprinkle salt and cook at low flame.
After it is cooked, add 2 tbsp of prepared chili paste.
