Coriander Chicken Curry


    For the marinate:

  • chicken, cleaned 1kg
  • turmeric powder 1tsp.
  • red chili powder 1tsp.
  • salt 1/2 tsp.

    For the curry:

  • coriander seeds 1 tbsp.
  • green cardamom 2-3
  • black peppercorns 6-7
  • cumin seeds 1tsp.
  • garlic cloves 5-6
  • ginger 1 inch piece
  • green chillies 5-6
  • dry whole red chilli 2
  • medium sized onion 4
  • fresh coriander, a hand full, only leaves
  • turmeric powder ½ tsp.
  • coriander powder 1tsp.
  • red chili powder 1tsp.
  • salt to taste
  • oil 3-4 tbsp.


  • Peel the onions, and slice them.
  • Heat oil in a wok or in a deep thick bottomed pan, add the cumin seeds, let them crackle.
  • Now add the sliced onion, sauté in low flame till golden brown.
  • Meanwhile in a small grinder add cardamom, coriander seeds black peppercorns, garlic cloves, ginger, green chilies, whole dry red chili fresh coriander and grind till a smooth paste. Your fresh madhubani masala paste is ready.
  • Add this masala paste to the wok. Sauté at low flame for 3-4 minutes. Now add turmeric powder, red chili powder and coriander powder to the wok, add 2 tbsp. Of water also, sauté for 3-4 minutes.
  • Now add chicken to the wok, season, mix everything together and sauté till chicken starts to get little bit brown.
  • Now add around ½ cup of water and simmer till chicken is cooked. Stir in between.
