Fruit Cake

Ingredients

  • 200g dried cherry
  • 250g self raising flour
  • 225g butter
  • 175g caster sugarn
  • 3 large eggs
  • 2 tsp. of vanilla essence
  • 100g ground almonds (makes the cake extra crumbly)
  • 1/4 cup milk

Method

  • Preheat the oven at 170 degrees, prepare a baking tray.
  • Rub the tutty-fruity in 1 tsp. of flour, that way they won't sink down to the bottom and won't get burnt.
  • Mix all the dry ingredients in a bowl. Add all the wet ingredients in a seperate bowl, whisk together, add gradually to the bowl of dry ingredients.
  • Bake at 170 degrees for one hour.
