Granola

Ingredients

  • 500g rolled oats
  • 150g almonds
  • 150g pumpkin seeds
  • 150g raisins
  • 100g peanuts
  • 2 tsp. ground cinnamon
  • 100g maple syrup
  • 1 tsp. salt
  • 50g coconut oil
  • 50g chia seeds.
  • 50g flax seeds
  • 50g dried apricots
  • 50g goji berries
  • garam masala powder ½ tsp.

Method

  • Preheat the oven at 180 degrees. Line a large roasting tin with baking parchment. In a large mixing bowl add all the ingredients for granola, mix well. Spread it in thin layer (in case it’s more than what fits into tin then bake in two batches but don’t spread it thickly, otherwise it won’t go crunchy).
  • Place it in the oven for 10-15 minutes. Take the tray out, place it on a cooling rack. Allow it to cool completely, then add the rest of the ingredients. Fill it in an airtight jar.
