Hot & Spicy Noodles
toasted coriander seeds 2tbsp.
dry red chili whole 6
onion small 1
garlic cloves 1
sugar 1 tsp
tamarind paste 1 tbsp or soy sauce
noodles of your choice
red and yellow peppers 1 each roughly chopped
Boil water add dry red chilies, switch off the flame, let the chili soak for 15-20 minutes.
Meanwhile, heat a pan, add whole coriander seeds, roast them, till they start to become fragrant.
After chiilies are soaked, drain the water add to a blender, also add toasted coriander seeds, onion, garlic and water, grind till smooth paste.
Heat 2 tbsp of oil in a wok, cook for ten - twelve minutes at low flame, it will become dry, take out in a bowl.
Add pinch of sugar and a tbsp of tamarind, mix well. This paste will be fresh inside the fridge for a week.
In the same wok add chopped peppers or any veg of your choice, sprinkle salt and cook at low flame.
After it is cooked, add 2 tbsp of prepared chili paste.
Add boiled noodles, add salt, mix well.
