Kheer

Ingredients

  • 2 ltrs milk
  • 100 gms rice, ½ cup of coarse rice powder
  • 150 gms or 2 tbsps of blanched, peeled and chopped almonds ground to a paste
  • few strands of saffron
  • 1/2 cup sugar

Method

  • Heat 1 tbsp of ghee and dry roast the rice and keep it aside.
  • Now for the almond paste,cook the almonds 5-6 minutes in boiling water, drain and add to the blender and grind until a fine paste forms.
  • Take a heavy bottom vessel, heat milk & add cooked rice, along with the milk.
  • Reduce to half or till rice softens.
  • Add the almond paste, saffron and keep stirring the same till the mixture thickens and sugar dissolves completely.
  • Plate, garnish with chopped almonds along with few strands of saffron and serve.
